Shirataki rice is not technically rice but a substitute that is often marketed as a no carb or low-carb alternative to traditional rice. It is made primarily from the root of the konjac plant (Amorphophallus konjac). Konjac, native to East Asia such as China and Japan, is a perennial herb. Its tuber is rich in dietary fiber, especially glucomannan (Konjac Glucomannan), which gives konjac rice its unique properties. The main ingredients of konjac rice are konjac flour and water.

Indeed, the claim that shirataki rice is considered low in carbohydrates or almost free of carbohydrates is based on its unique ingredients and scientific test data.
